Goulash

Hungarian Goulash with Spaetzle
Goulash
- 1 tablespoon vegetable oil
- 4 large onions, sliced
- 1 head garlic cloves, halved
- 2 red bell peppers, seeded and diced
- ½ cup sweet paprika
- 1 teaspoon caraway seeds
- 1 3-pound chuck roast, trimmed and cut in 1-inch cubes
- 4 carrots, chopped
- 3 cups Hungarian red wine or other red wine
- 3 bay leaves
- 1 teaspoon salt
- 2 tablespoons red wine vinegar
Spaetzle
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 pinch pepper
- 2 large eggs
- 1 ¼ cups milk
- 1 250 mL container of sour cream (for topping)
